There are certain dishes you recognize before anyone tells you where they came from.
Maybe it’s the pizza you’ve been ordering since your kids were little, the salad everyone at the table somehow agrees to share, or the bakery box whose contents you can identify before the lid comes off. Over time, food becomes connected to place, and place becomes connected to memory.
Which brings us to this roll.
We ordered it recently at a Bergen County restaurant we’ve been going to for years. The funny thing is, sushi isn’t necessarily the first thing you’d associate with this particular place. There are other things on the menu that get considerably more attention. But those who know, know.
And this is one of those orders.
Spicy, creamy, a little indulgent, and piled high enough that eating it gracefully is probably not the point, this particular roll has become part of our routine here. We know what we like, and this tends to find its way onto the table.
But we’re not telling you where we are. Yet.
